Spicy Ridge Gourd Chutney

Spicy Ridge Gourd Chutney (Beerakaya Chutney) is a spicy chutney that pairs well with rice and complements any South Indian dish, such as Dosa, Uttapam, Idli, and Vada.

Ingredients

Peanuts 1 tablespoon
Ridge Gourd 2 cups
Cubes cut tomatoes 1 cup
Cumin Seed 1.5 teaspoons
Green Chilies 5-6 pieces
Tamarind Paste 1 teaspoon
Garlic 3 pieces crushed
Salt 1 teaspoon
Vegetable Oil 2 tablespoons
Sesame seeds 1 tablespoon
Onion cubes 1/4 cup
Mustard seeds 1/2 teaspoon
Urad dal 1/2 teaspoon
Dry whole chilies 2 pieces
Curry leaves 1 tablespoon
Turmeric powder 1/2 teaspoon
Coriander leaves 1/4 cup

 

Preparation

Peel off ridge gourd and cut into cubes size.

Slit green chilies in length.

Cooking
  • Step 1

Take a hot fry pan, add peanuts, 1/2 tsp cumin seeds, roast for 1 minute. Add sesame seeds and roast for a minute more. Put all the roasted ingredients in a grinder and grind them into a fine powder. Keep them aside on a plate.

  • Step 2

Add one teaspoon oil to the hot frypan, when oil gets hot, add green chilies, sauté until light brown.

Add the fried green chilies, tamarind paste, and powder from step 1 to a blender and blend them until finely ground. Keep them aside on a plate.

  • Step 3

Add one teaspoon oil in a hot frypan, when oil gets hot, add ridge gourd, tomato cubes, and coriander leaves sauté for a minute and keep the lid on and let all cook until they get soft. Keep them aside on a plate.

  • Step 4

Now put the material of step 3 and step 2 in a blender and add salt. Blend all the materials coarsely. Take the mixture out of the bowl.

  • Step 5

Heat a small pan for tadka. Add 2 tablespoons of oil, let it heat, add 1/2 teaspoon of cumin seeds, mustard seeds, urad dal, and red whole chilies, and let them turn light brown. Now add crushed garlic and curry leaves, turmeric powder, and sauté for a minute.

Turn off the heat and pour tadka on top of the mixture of step 4.

  • Step 6

For garnishing fry onion cubes and pour on top of chutney. This makes your hot n spicy ridge gourd chutney ready.

Your hot and spicy chutney is ready to serve.

Serving

Serve chutney with any south Indian cuisine as a side. This chutney pairs well with rice; you can enjoy it alongside Dosa, Uttapam, Idli, and Vada. If you are a spicy food lover, you can also enjoy any Indian cuisine.
