Cooking

Set the Instant Pot to the sauté setting. Once the inner pot is hot, pour oil into it. After the oil has heated, add cumin, a cinnamon stick, and a bay leaf. And saute a bit.

Now add the onion, garlic, and green chilies whole, and continue sautéing until the onion becomes translucent.

Now, add ginger garlic paste and cashews, and sauté for a bit. Then, add the tomatoes.

Now, add the tamarind paste and sauté for a minute. Add green peas (you can add any other green vegetables here, if you prefer). Now turn off the saute mode of the Instant Pot and turn on the Rice mode.

Add 1 cup of rice and 1.5 cups of water, cover the lid, and let it cook on the medium setting for.

After the Instant Pot indicates cooking is complete, your tamarind rice is ready to serve.
